Vinification et élevage
The grapes are harvested early at the end of August given their proximity to the Hérault coast. The harvest is carried out at night or very early in the morning in order to preserve all the freshness and integrity of the berries. As soon as they arrive at the winery, the grapes are pressed immediately and gently to promote a very light color. The first juices of flows and the presses are moved apart in order to preserve only the heart of the vintage. The musts after pressing are statically settled in the cold for 48 to 72 hours to obtain a very clear must and promote mineral expression. Alcoholic fermentation is carried out at temperatures of 15 and 18°C to promote expression and freshness aromas. The wine is aged on its fine lees in stainless steel vats for several weeks before being bottled.

Very pale yellow color with green highlights. Nose fresh and intense, fermentation and citrus aromas. Gourmet and balanced mouth. Long finish and mineral.
